Greek Baked Shrimp

How To Prepare
Directions:

Preheat oven to 450 degrees.

Remove shells from shrimp, leaving last segment and tail intact; remove vein.

Rinse and dry.

In a pan saute onion in oil until transparent, (adding a few drops of water if necessary), add garlic and green onion and cook 2 minutes more.

To the onions add the tomatoes, wine, half the parsley, oregano, and pepper to taste.

Reduce heat, cover and simmer for 30 minutes until thickened.

Pour half the sauce into a shallow casserole, and arrange the shrimp on top.

Pour the rest of the sauce over the shrimp.

Bake at 450 degrees for 10-12 minutes or until prawns are pink.

Garnish with remaining parsley and serve.

Grecian Peach Chicken Salad

How To Prepare
In a large bowl, whisk together the orange juice, lemon juice, garlic, mustard and pepper. Whisk in the olive oil until well blended. Add the chicken, chickpeas, cucumber, onion and peaches; stir and toss to coat well. Store in refrigerator until ready to serve.

To serve, divide the salad greens according to your individual serving size. Top each with your prescribed amount of the chicken mixture. Sprinkle with the mint.

Grapefruit and Cucumber Salad With Seared Salmon

How To Prepare
1. Peel and segment grapefruit with a sharp knife on a cutting board; reserve juice in a bowl. Toss grapefruit segments and juices with arugula and cucumber; divide salad among 4 serving plates. In a small bowl, whisk together lemon juice, vinegar, and 1/4 teaspoon pepper.

2. Sprinkle remaining pepper over both sides of salmon. Coat a large nonstick skillet with cooking spray; heat over medium-high heat. Add fish (skin-side down) to skillet, and cook until fish releases easily from pan (about 4 minutes). Using a spatula, gently flip fish and cook about 3 minutes more. Drizzle salads with reserved dressing.

Golden Baked Pork Cutlets

How To Prepare
Preheat oven to 400°F. Coat a rimmed baking sheet with cooking spray.

Holding a chef’s knife at a 45° angle and perpendicular to the tenderloin, slice the pork into 4 long, thin “fillets.”

Mix potato flour, Splenda, paprika, and onion powder in a shallow dish. Drizzle with oil and mash with a fork until the oil is thoroughly incorporated. Lightly beat egg white with a fork in another shallow dish. Sprinkle 4 teaspoons of potato flour over the pork slices and pat to coat evenly on both sides. Dip the pork into the egg, then press into the flour/spice mixture until evenly coated on both sides. (Discard leftover mixture.)

Place the pork on the prepared baking sheet. Bake until just barely pink in the center and an instant-read thermometer registers 145°F, 14 to 16 minutes.

Gingery Pork Meatballs with Noodles

How To Prepare
1. Place a foil-lined jelly-roll pan in oven. Preheat oven to 450°.
2. Combine first 8 ingredients in a large bowl; stir gently just until blended. Cover and chill 30 minutes. Divide pork mixture into 20 equal portions; shape each portion into a meatball. Arrange meatballs in a single layer on preheated pan. Bake at 450° for 20 minutes or until done.
3. Cook noodles according to package directions; drain. Rinse noodles under cool water; drain. Heat oil in a large nonstick skillet over medium-high heat. Add bell pepper and crushed red pepper; cook 5 minutes, stirring occasionally. Add noodles; toss. Place 1 3/4 cups noodle mixture on each of 4 plates; top each serving with 5 meatballs. Sprinkle each serving with 2 tablespoons green onions.

Ginger Chicken

Toast split peas, coriander seeds and chiles in a small skillet over medium heat, shaking the pan occasionally, until the split peas turn reddish-brown, the coriander becomes fragrant and the chiles blacken slightly, 2 to 3 minutes. Transfer to a plate to cool for 3 to 5 minutes. Grind in a spice grinder or mortar and pestle until the mixture is the texture of finely ground pepper.

Combine ginger, garlic, cilantro, and the spice blend in a shallow glass dish. Add chicken and turn to coat. Cover and refrigerate for at least 30 minutes or overnight.

Preheat broiler. Coat a broiler-pan rack with cooking spray. Place the chicken (including marinade) on the rack over the broiler pan. Broil chicken 3 to 5 inches from the heat source until it is no longer pink in the center and the juices run clear, 4 to 6 minutes per side.

Garlic Lover’s Roast Beef

Directions:

Remove the roast from refrigerator 1 hour before cooking to reach room temperature. Trim all the fat off the meat. Using a sharp knife, pierce meat about 1/2-inch deep and insert slivers of garlic in each hole, pushing all the way in. Lightly spray the meat with olive oil and season generously with pepper and rosemary. Place the thermometer all the way into the center of the meat.

Preheat oven to 350°. When the oven reaches 350°, place the roast in a roasting pan and put in the oven.

Roast until the thermometer reads 130° for rare, 140° for medium rare, 150° for medium, and 155-160° for well done. Remove the roast from the oven and let it rest 10-20 minutes before you cut it so that the juices distributed evenly. I personally remove my roast beef from the oven when it is 135° for medium rare. The temperature will rise an additional 5 degrees as it sits.

Slice according to your portion size and serve.

Fragrant Fish Soup

How To Prepare
Combine rice and water in a medium saucepan. Bring to a simmer over medium heat; cover and cook until the water is absorbed, about 20 minutes. Stir in lemon zest and juice.
Meanwhile, bring broth to a simmer in another medium saucepan over medium-high heat. Reduce the heat so the broth remains steaming, but not simmering. Add fish and cook until just tender, about 5 minutes. Remove and break into bite-size chunks.
Divide the lemony rice among 4 bowls. Top with equal portions of the fish, arugula (or watercress), mint and scallions. Ladle 1 cup of the warm broth into each bowl and serve.

Flounder Piccata

How To Prepare
Directions:

Season fish with pepper. Heat oven to 200°.

In a shallow bowl, beat the egg whites. Place the potato flour/salt free blend mix in another dish. Dip each fish filet in the egg whites, then seasoned potato flour.

Heat a large saute pan over medium to medium-low heat. Spray olive oil spray on one side of the fish, and lay it in the pan, oil side down. Spray the other side of the fish to coat and cook for 4 to 5 minutes on each side, until fish is opaque and cooked through. Set aside on a platter in a warm oven until you make the sauce.

Over medium heat in the same pan, add the lemon juice, wine, chicken broth, the reserved lemon halves, and pepper and bring to a boil. Boil over high heat until the liquid is reduced to half, about 3 – 4 minutes. Discard the lemon halves and spoon the sauce over the fish; place a slice of lemon on each filet and top with fresh parsley.

Flemish Beef Stew

How To Prepare
Heat 2 teaspoons oil in a large skillet over medium heat. Add half the beef and brown on all sides, turning frequently, about 5 minutes. Transfer to a 6-quart slow cooker. Drain any fat from the pan. Add the remaining 2 teaspoons oil and brown the remaining beef. Transfer to the slow cooker.
Return the skillet to medium heat, add mushrooms and cook, stirring often, until they give off their liquid and it evaporates to a glaze, 5 to 7 minutes. Sprinkle flour over the mushrooms; cook undisturbed for 10 seconds, then stir and cook for 30 seconds more. Pour in ale (or beer); bring to a boil, whisking constantly to reduce foaming, until thickened and bubbling, about 3 minutes. Transfer the mushroom mixture to the slow cooker.
Add onion, garlic, mustard, caraway seeds, pepper and bay leaf to the slow cooker. Stir to combine.
Put the lid on and cook on low until the beef is very tender, about 8 hours. Discard the bay leaf before serving.
