Low Fat Vegetable Curry

How To Prepare
Heat oil in large pot or Dutch oven. Add curry powder and cumin and stir for 1 minute until aromatic.

Add onion and potatoes and saute for 3-4 minutes, stirring constantly. Add squash, green beans and broccoli and cook for 2 minutes. Add tomatoes and tomato sauce. Simmer uncovered for 20 minutes until vegetables are tender and sauce has thickened.

Braised Paprika Chicken

How To Prepare
Pat chicken pieces dry with paper towels and season with 1/2 teaspoon pepper.
Heat oil in a large heavy casserole or Dutch oven over medium heat. Add onions and sprinkle with Splenda. Cook, stirring frequently, until the onions are very soft and light brown, 10 to 15 minutes.
Stir in bell peppers, tomato paste, paprika and crushed red pepper. Add the chicken and stir it gently into the onion mixture. Sprinkle with marjoram and add broth. Cover the pot with a tight-fitting lid and simmer over medium-low heat until the chicken is very tender, about 50 minutes.
When the chicken is done, remove it to a plate. Stir potato flour into the sauce; return to a simmer and cook, stirring, until the sauce coats the spoon. Reduce heat to low, return the chicken to the sauce and reheat, about 1 minute. Serve garnished with parsley, dill and/or chives, if desired.

Tip: Cut each chicken breast in half crosswise to make pieces about the size of a thigh. When the pieces are about the same size, they’ll cook at about the same rate.

Black-Eyed Peas with Pork Greens

How To Prepare
Toss pork with 1/4 teaspoon pepper. Heat oil in a large nonstick skillet over medium heat. Add the pork and cook, stirring, until just cooked through, 4 to 6 minutes. Transfer to a bowl with a slotted spoon.
Add onion, tomato paste and rice to the pan and cook until the onion softens, about 4 minutes. Add kale and garlic and cook until the kale begins to wilt, 1 to 2 minutes. Stir in broth, vinegar, and paprika. Bring to a boil. Cover, reduce heat and simmer until the rice is done, 15 to 20 minutes. Stir in the reserved pork and black-eyed peas and heat for 1 minute.

Beef and Vegetable Kebabs

How To Prepare
Preheat broiler.
Divide the first 5 ingredients evenly among 4 (12-inch) skewers, and with thyme, and black pepper. Place on a broiler pan coated with cooking spray; drizzle kebabs with oil.
Broil 10 minutes or until desired degree of doneness, turning once.

Yakisoba Chicken

How To Prepare
In a large skillet combine sesame oil, canola oil and chili paste. Stir fry 30 seconds. Add garlic and stir fry an additional 30 seconds. Add chicken and 1/4 cup of the teriyaki and stir fry until chicken is no longer pink. Remove mixture from pan, set aside and keep warm.
In the emptied pan combine the onion, cabbage and carrots. Stir fry until cabbage begins to wilt. Stir in the remaining teriyaki, cooked noodles and the chicken mixture to pan and mix to blend. Serve and enjoy!

Vietnamese-Style Beef Noodle Broth

How To Prepare
Heat oil in a Dutch oven or soup pot over high heat. Add beef and cook, stirring often, until just cooked, about 2 minutes. Transfer to a plate using tongs, leaving the juices in the pot.

Add bok choy to the pot and cook, stirring, until wilted, about 2 minutes. Add broth and water, cover and bring to a boil. Add noodles and teriyaki; simmer until the noodles are soft, about 4 minutes. Return the beef to the pot and cook until heated through, 1 to 2 minutes more. Ladle into bowls and sprinkle with bean sprouts and basil. Serve hot.

Hungarian Chicken Apple Soup

How To Prepare

Heat oil in a medium saucepan over medium heat. Add apple, potato, onion and celery; cook, stirring often, until the onion is translucent, about 5 minutes. Stir in sage, paprika and pepper; cook for 30 seconds. Pour in broth and bring to a simmer. Reduce heat, cover, and gently simmer until the potato is tender when pierced with a fork, 10 to 15 minutes.

Transfer the soup to a large blender or food processor and process until smooth. (Use caution when pureeing hot liquids.) Garnish with celery leaves, if desired

Grilled snapper curry

How To Prepare
Mix coconut extract and spices with rice milk and potato flour. Set aside.

Heat large skillet to medium-high, add oil and quickly saute vegetables. Cook for a few minutes, until some browning has occurred and vegetables are soft. Add milk and spice mixture to pan and stir to combine. Heat gently, but do not boil. Remove from heat.

Grill snapper on charcoal grill until it reaches an internal temperature of 145 F. Serve each grilled fillet with 1 1/2 cups of vegetables and sauce.

Golden Baked Pork Cutlets

How To Prepare
Preheat oven to 400°F. Coat a rimmed baking sheet with cooking spray.

Holding a chef’s knife at a 45° angle and perpendicular to the tenderloin, slice the pork into 4 long, thin “fillets.”

Mix potato flour, Splenda, paprika, and onion powder in a shallow dish. Drizzle with oil and mash with a fork until the oil is thoroughly incorporated. Lightly beat egg white with a fork in another shallow dish. Sprinkle 4 teaspoons of potato flour over the pork slices and pat to coat evenly on both sides. Dip the pork into the egg, then press into the flour/spice mixture until evenly coated on both sides. (Discard leftover mixture.)

Place the pork on the prepared baking sheet. Bake until just barely pink in the center and an instant-read thermometer registers 145°F, 14 to 16 minutes.

Chinese Celery Pork

How To Prepare
Remove all visible fat from pork. Partially freeze meat; slice thinly into strips. Stir together in a bowl of Teriyaki and potato flour. Add stock and set aside.

Heat oil in wok or non-stick skillet over high heat. Add garlic and ginger root and cook for 1/2 minute. Add celery and onions and cook lightly. The vegetables should be slightly crisp, not overcooked. Remove vegetables and keep warm.

Add pork to the hot wok or skillet and dry fry until brown. Stir continuously. Add stock mixture to pork, cook and stir until thick and bubbly. Add cooked vegetables and tomatoes. Cover and cook for 1 minute. Serve immediately.
