Soft Tacos with Green Chili Cilantro Rice and Egg White

How To Prepare
1. Combine first 3 ingredients in a medium bowl, stirring with a whisk.
2. Combine onion and next 6 ingredients in another medium bowl, stirring with a spoon. Add rice; stir gently. Cover and keep warm.
3. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Add egg white mixture to pan; cook over medium heat 2 minutes. Do not stir until mixture begins to set on bottom. Draw a heat-resistant spatula through egg mixture to form large curds. Do not stir constantly. Egg mixture is done when thickened, but still moist. Remove from heat.
4.Lay out butter lettuce leaves and Spoon scrambled egg evenly over butter lettuce leaves; top evenly with rice mixture, and fold in half. Serve with lime wedges, if desired.

Lima Bean Spread with Cumin Herbs

How To Prepare
PREPARATION
Bring a large saucepan of lightly salted water to a boil. Add lima beans, garlic and crushed red pepper; cook until the beans are tender, about 10 minutes. Remove from heat and let cool in the liquid.
Drain the beans and garlic. Transfer to a food processor. Add oil, lemon juice, cumin, and pepper; process until smooth. Scrape into a bowl, stir in mint, cilantro and dill.

How To Prepare
Heat large skillet sprayed with cooking spray over medium heat. Add the onion, and cook until tender. Stir in the okra, and season with cumin, ginger, coriander, and pepper. Cook and stir for a few minutes, then reduce the heat to medium-low, and cover the pan. Cook for 20 minutes, stirring occasionally until okra is tender.

Blackened Chicken

How To Prepare
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. Heat a cast iron skillet over high heat for 5 minutes until it is smoking hot.
Mix together the paprika, cayenne, cumin, thyme, white pepper, and onion powder. Oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture.
Place the chicken in the hot pan, and cook for 1 minute. Turn, and cook 1 minute on other side. Place the breasts on the prepared baking sheet.
Bake in the preheated oven until no longer pink in the center and the juices run clear, about 5 minutes.

Beef Bean Chile Verde

How To Prepare
Cook beef, bell pepper and onion in a large saucepan over medium heat, crumbling the meat with a wooden spoon, until the meat is browned, 8 to 10 minutes. Add garlic, chili powder, cumin and cayenne; cook until fragrant, about 15 seconds. Stir in salsa and water; bring to a simmer. Indian-Spiced Lentils and Lamb

How To Prepare
1. Heat a saucepan over medium-high heat. Add oil to pan; swirl. Add lamb and next ingredients (through red pepper); sauté 4 minutes, stirring to crumble. Add onion, carrot, and jalapeño; sauté 4 minutes or until lamb is browned. Add garlic; sauté 1 minute, stirring constantly. Stir in tomato paste; sauté 30 seconds.
2. Add lentils; sauté 30 seconds. Stir in broth and next 3 ingredients (through tomatoes); bring to a boil. Reduce heat, and simmer for 40 minutes or until lentils are tender. Ladle your portion size lentil mixture into each of the bowls; top each serving with 1 tablespoon cilantro.

Grilled Salmon with North African Flavors

How To Prepare

Stir together parsley, cilantro, lemon juice, oil, garlic, paprika, cumin, and pepper in a small bowl. Reserve 1/4 cup for sauce; cover and refrigerate. Place salmon fillets in a large sealable plastic bag. Pour in the remaining herb mixture, seal the bag and turn to coat. Refrigerate for 20 to 30 minutes, turning the bag over once.

Meanwhile, preheat grill to medium-high.

Oil the grill rack (see Tip). Remove the salmon from the marinade, blotting any excess. Grill the salmon until browned and opaque in the center, 4 to 6 minutes per side. To serve, top each piece with a dollop of the reserved sauce and garnish with lemon wedges.

Fish Tacos

How To Prepare
Thaw fish, if frozen. Rinse fish and pat dry with paper towels. Cut fish crosswise into 3/4-inch slices. Place fish in a single layer in a greased shallow baking pan. Combine olive oil, cumin, and garlic powder. Brush over fish. Bake in a 450 degree F oven for 4 to 6 minutes or until fish begins to flake when tested with a fork.

Meanwhile, in a medium bowl stir together lime juice, cabbage; toss to coat. Spoon some of the coleslaw mixture into a butter lettuce leaf; add fish slices and top with Mango Salsa.

Peach Salsa

In a medium bowl combine peach; red sweet pepper; green onion; jalapeno chile pepper; olive oil; lime peel; lime juice; vinegar; and black pepper.

Fiesta-Style Scallops

How To Prepare
Pat scallops dry

Combine cumin, chili and black pepper in a medium bowl. Toss scallops in spice mix.

Heat oil in large skillet on medium heat. When oil is hot, add scallops. Cook for 2 minutes per side, undisturbed.

While scallops are cooking, combine hot rice with chopped cilantro, diced tomato, and jalapeno.

Drizzle with lime juice and toss.

Serve scallops atop rice and garnish with cilantro if desired.
