Pork Chops with Orange Fennel Salad

How To Prepare
Remove the skin and white pith from orange with a sharp knife. Working over a bowl, cut the segments from their surrounding membranes. Squeeze juice in the bowl before discarding membranes. Transfer the segments with a slotted spoon to another bowl. Whisk lemon juice into the bowl with the orange juice. Set aside.
Season pork chops on both sides with fennel seeds and pepper. Heat oil in a large nonstick skillet over medium heat. Add the chops and cook until browned and just cooked through, 2 to 3 minutes per side. Transfer to a plate and tent with foil to keep warm.
Add sliced fennel and shallot to the pan and cook, stirring, for 1 minute. Add watercress (or arugula) and cook, stirring, until it begins to wilt, 1 to 2 minutes more. Stir in the reserved orange segments, then transfer the contents of the pan to a platter.
Add the reserved orange juice mixture and any accumulated juices from the pork chops to the pan. Cook, stirring constantly, until slightly thickened, about 1 minute. Serve the pork chops on the fennel salad, drizzled with the pan sauce.

Egg white Oats with bananas and berries

How To Prepare
BOIL: Bring water to a boil in a sauce pan. Add quick oats, cinnamon, & vanilla.. turn heat to low.

EGGS: Separate egg whites and whisk in bowl until until foamy.

WHISK: Once oats have absorbed most of the water (approx. 5 mins) whisk in egg whites and cook on low for 1 minute.

FINAL TOUCHES: Serve in bowl & top with lemon juice, banana, berries, nuts & shredded coconut….ENJOY YOUR NEW BODY:)

*OPTIONAL: Add No sugar maple syrup and/or a dash of coconut aminos. Try adding cook sweet potatoes, squash or apples. Replace water with low-fat coconut or almond milk if you want a creamier meal.

Lima Bean Spread with Cumin Herbs

PREPARATION
Bring a large saucepan of lightly salted water to a boil. Add lima beans, garlic and crushed red pepper; cook until the beans are tender, about 10 minutes. Remove from heat and let cool in the liquid.
Drain the beans and garlic. Transfer to a food processor. Add oil, lemon juice, cumin, and pepper; process until smooth. Scrape into a bowl, stir in mint, cilantro and dill.

Balsamic Glazed Fish

How To Prepare
Heat Oven to 450 degrees.
Season fish to taste with pepper. Place on a cookie sheet or in a 9 x 13 inch casserole dish and bake 10-12 minutes.
While the fish cooks combine remaining ingredients and whisk well. Microwave covered on 50% heat for 2 minutes, stirring half-way.
Drizzle glaze over fish and serve.

White Bean Herb Hummus with Crudites

How To Prepare
1. Combine beans, chives, lemon juice, and oil in a small bowl. Mash with a fork until smooth.

2. Serve with 1/2 cup raw vegetables, such as cucumbers, carrots, sugar snap peas, bell peppers, broccoli, and grape tomatoes.

King Crab Potato Salad

Bring a large pot of water to a boil. Add beans and cook until bright green, 2 to 3 minutes. Transfer to a colander using a slotted spoon; refresh under cold water.

Add potatoes to the boiling water. Cook until tender when pierced with a fork, 8 to 10 minutes. Drain in a colander; refresh under cold water until room temperature.

Toss the green beans and potatoes with crab, celery, radishes and onion in a large bowl.

Italian Egg-Drop Soup

Combine broth, water, pasta, chickpeas, scallion whites and nutmeg in a Dutch oven; cover and bring to a boil over high heat. Uncover and boil for half as long as directed by the pasta package, 3 to 5 minutes.

Stir in arugula and cook until wilted, about 1 minute. Reduce heat to low. While stirring the soup constantly, slowly add egg whites; cook for 2 minutes. (The cooked egg whites will look like feathery strands.) Season with pepper and stir in the scallion greens and lemon juice.

Island Salad

How To Prepare
Bring chicken stock and lemon rind to boil, add rice and cover. Lower the heat and simmer about 20 to 25 minutes until rice is tender. Remove from heat, uncover and allow to stand 5 minutes. Toss with a fork. Refrigerate until cold.

Blend sherry, lemon juice, olive oil, orange juice, parsley, and pepper thoroughly. Add chicken, melon and pineapple to rice. Pour over dressing, toss till well mixed.

Serve chilled.

Grilled Shrimp Skewers over White Bean Salad

How To Prepare
Combine lemon zest, lemon juice, oil, oregano, sage, chives, and pepper in a large bowl. Reserve 2 tablespoons of the dressing in a small bowl. Add beans, tomatoes and celery to the large bowl; toss well.
Preheat grill to medium-high or place a grill pan over medium-high heat until hot.
Thread shrimp onto 6 skewers. (If using a grill pan, you don’t need to skewer the shrimp.)
Oil the grill rack (see Tip) or the grill pan. Grill the shrimp until pink and firm, turning once, about 4 minutes total. Serve the shrimp on the white bean salad, drizzled with the reserved dressing.

Tip: To oil a grill rack, oil a folded paper towel, hold it with tongs and rub it over the rack. (Do not use cooking spray on a hot grill.)
