Blackened Chicken

How To Prepare
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. Heat a cast iron skillet over high heat for 5 minutes until it is smoking hot.
Mix together the paprika, cayenne, cumin, thyme, white pepper, and onion powder. Oil the chicken breasts with cooking spray on both sides, then coat the chicken breasts evenly with the spice mixture.
Place the chicken in the hot pan, and cook for 1 minute. Turn, and cook 1 minute on other side. Place the breasts on the prepared baking sheet.
Bake in the preheated oven until no longer pink in the center and the juices run clear, about 5 minutes.

Baked Stuffed Flounder

How To Prepare
Heat oven to 400 degrees F. Toss together the celery, carrots, leek and oil in flameproof 13 x 9 x 2-inch baking pan.

Roast vegetables in 400 degree F oven 20 minutes, stirring once or twice. Add tomato. Roast 10 minutes. Remove mixture from pan and reserve.

Mix garlic and onion powders and pepper in small cup. Season skinned side of each fish fillet with half of the garlic and onion powder mixture. Place in baking pan.

Place one-sixth of sauteed vegetable mixture over center of each fillet . Top with one-sixth of basil. Fold ends of fish over filling; turn fillets over, seam side down. (Or place filling over one half of each fillet; fold other half over.) Drizzle with wine. Season fillets with remaining garlic and onion powder mixture. Place sprig of thyme on top of each fillet. Cover pan with foil.

Bake in 400 degree F oven for 12 minutes or until cooked through. Remove fish to platter; cover.

Boil pan juices in pan on stove top, about 3 minutes, until reduced by half. Whisk in butter and lemon juice until creamy. Serve with fish.

Golden Baked Pork Cutlets

How To Prepare
Preheat oven to 400°F. Coat a rimmed baking sheet with cooking spray.

Holding a chef’s knife at a 45° angle and perpendicular to the tenderloin, slice the pork into 4 long, thin “fillets.”

Mix potato flour, Splenda, paprika, and onion powder in a shallow dish. Drizzle with oil and mash with a fork until the oil is thoroughly incorporated. Lightly beat egg white with a fork in another shallow dish. Sprinkle 4 teaspoons of potato flour over the pork slices and pat to coat evenly on both sides. Dip the pork into the egg, then press into the flour/spice mixture until evenly coated on both sides. (Discard leftover mixture.)

Place the pork on the prepared baking sheet. Bake until just barely pink in the center and an instant-read thermometer registers 145°F, 14 to 16 minutes.

Easy Cajun Chicken

How To Prepare
Rub the chicken with olive oil. Add Cajun seasoning and toss until chicken is fully coated. Spread the chicken out on cookie sheets with at least an inch between pieces. Bake in the center of a preheated 400 degree (F) oven for about 50 minutes (40 minutes for wings). The skin should be golden and crispy, and the juices should run clear.

  1. 1. Wash, peel and quarter your potatoes. Place them in a medium pot and cover with water. Bring to a boil, then cook for 12-14 minutes, until tender. 2. While potatoes are cooking, in a small pot, bring to a boil 1 1/3 cup of unsweetened rice milk with 2 smashed garlic cloves. As soon as milk starts to boil, remove from heat and let it stand. 3. Remove cooked potatoes from heat and drain them. First mash them with a potato masher, than with a hand mixer. I mash mine in the same pot. Place mashed potatoes back on the stove over medium heat and stir them constantly for about two minutes until they are slightly dry. Remove from heat. 4. Add 1 1/3 cup of rice milk mixture to the mashed potatoes, but discard the garlic cloves. Add 1 Tbsp of chives. Season with pepper and onion powder. Mix everything together until well combined. 5. Serve warm and garnish with chives.
