How To Prepare
Cut four 15-inch (38 cm) squares of parchment paper; fold each crosswise in half then open out. Divide lemon over 1 side of each; top with 1 fish fillet, skin side down. Drizzle with oil; top with garlic and thyme. Sprinkle each with pepper. Fold paper over so edges meet; double-fold edges and pinch to seal packet.

Bake on rimmed baking sheet in 400°F (200°C) oven for about 10 minutes or until fish flakes easily when tested. Transfer fish to plate; pour sauces from packets over fish.

Oven-Baked Chicken Patties

Mix all of the ingredients and spoon into 6 lightly coated (with oil) muffin top pans. With your fingers, spread and pat the chicken mixture to fill the cups evenly. Bake at 350º for 20 minutes until set and lightly browned around the edge

Artichoke Chicken

How To Prepare
Pound the chicken breasts flat and place them on a rimmed foil-lined baking sheet. Mix the remaining ingredients and spread evenly over the chicken. Bake at 375º 15 minutes. Keeping the chicken on the center oven rack, turn on the broiler and broil the chicken about 5-7 minutes until the topping has browned, watching it closely so that it doesn’t burn.

How To Prepare
In a small bowl, combine lemon juice, garlic, and pepper, set aside.
Wash and dry zucchini, parsley and dill.
Using a grater, grate (shred) the zucchinis into a medium bowl. (NOTE: if you don’t have a grater, use a vegetable peeler to slice the zucchini into ribbons)
Mix in parsley, dill, and onion
Add lemon dressing mixture to the zucchini mixture and stir well.
Chill covered 2 hours or overnight before serving.
