How To Prepare
Cook the rice according to the instructions on the package.
Meanwhile, heat the oil in a large nonstick skillet. Add garlic and onion and cook for 5 minutes until translucent. Add sliced mushrooms and broccoli florets; cook for 2-3 minutes. Stir in tuna and tomatoes; cook for 5 minutes until thoroughly heated. Add rice, and parsley if you have it, and mix well.

- 3 cans ( aprox. 16 oz) low sodium white meat tuna packed in water
- 10 ounces brown rice (microwavable rice speeds things up)
- 2 tbsp olive oil
- 2 1/2 garlic cloves, crushed
- 1 1/2 onions, finely chopped
- 1 8-ounce pack sliced cremini mushrooms
- 1/2 pound broccoli, cut into florets
- 1 1/2 28-ounce cans no salt added chopped tomatoes
- 1 cup fresh parsley, chopped (optional)
